This is an absolute Cross O favorite! Most people don’t know what a Flat Iron steak is because it is actually a “newer” cut that has only been around for the past couple decades. In a joint initiative between the University of Florida and the University of Nebraska, this cut that had previously been used for roast or ground beef was found to be some of the best texture and perfectly marbled cuts of meat that can be found. When you taste it and experience it for yourself, you will know how hard this cut is to find and you’ll be happy it’s our little secret.
Every single cut of our meat is grown and raised on the Cross O Ranch in the mountains of central Idaho. The lush mountain grass and crystal clear springs contribute to creating the highest quality meat that can be found anywhere in the world.

Local Orders: If you are one of our "local" customers, we are happy to offer you two options for receiving your order -
1) You can come here to the ranch in Pollock and pick it up yourself. If this is the option you select, we will notify you when your order is ready and send you additional instructions for pick up. Typical turnaround time for this is 24-48 hours.
2) We can coordinate when we are making deliveries in your area and set up time to meet you closer to home or at your doorstep. If this is the option you select, we will notify you via email when we are in the area delivering and include additional instructions for delivery. We deliver to the Riggins/McCall area weekly and the Boise/Treasure Valley area monthly.
Shipping: If you would like your order shipped, we are excited to ship our meat directly to your door! We ship the first Monday/Tuesday of the month and the third Monday/Tuesday of the month and use UPS two day shipping to ensure your packages arrive safely. Upon shipping, you will receive email confirmation with your UPS tracking number(s).
